Garlic Roasted Fingerling Potatoes

Normally I am more prone to eating sweet potatoes and yams….but every once in a while we’re all in the mood for a white starch variety, right? If you can get your hands on some Organic French Fingerling potatoes, you’re in for a treat!! (if not, any small potatoes will do…even red bliss)

No, they are not fried. But once you try these, you won’t be craving french fries anymore! When roasted perfectly in the oven, the delicate skin of fingerling potatoes becomes perfectly crisp and delicious!! The inside is soft and melts in your mouth like butter (minus the actual butter of course!!). πŸ˜‰

Roasted Fingerling Potatoes

Ingredients:

1 – 1 1/2 lb bag Fingerling Potatoes (preferably organic!) 3-4 cloves fresh Minced Garlic 2 tbs Olive Oil (enough to generously coat potatoes) 1 tsp fresh chopped Parsley 1/4 tsp fresh ground Black Pepper 1/8 tsp Paprika Dash Sea Salt Slice potatoes in half. Toss them in the mixture of ingredients and arrange in a single layer in a baking dish. Cover with foil and bake @ 425 for 40 minutes; toss around halfway through. Check by piercing with fork. If not quite soft, cook for and additional 10 minutes.
