Blueberry Banana Oats

When it comes to fruit, I’m a total snob!! It has to be just right; definitely not too ripe or I won’t go NEAR it. I must have had a bad fruit experience as a child!

I can tolerate bananas regardless of serving style, but blueberries are a different story. I just don’t like them unless they’re hot!! I can’t fathom eating a handful of cold blueberries, but add them in a muffin or a pancake and I’m all over it! So with my love of warm blueberries, I had to figure out a way to eat them with out overloading on baked goods. I found an awesome solution in the form of a power breakfast!

On those days where you know you’re going need some slow released energy to get you though the day, check out this creation. It will keep you full and provide steady power for hours on end.

Blueberry Banana Oats

Ingredients:

1/2 cup Instant Oats
1 cup Unsweetened Vanilla Almond Milk
3/4 cup Blueberries
1 medium chopped Banana
Sprinkle Cinnamon (optional)

Boil. Bring the almond milk to a boil; stir occasionally to prevent film at the bottom of the pot. Stir in oats and cook at medium heat for 1 minute.

Add fruit and cook for an additional minute.

Serve warm and enjoy!
